- 8 chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes
Instructions
- In a small bowl, whisk together 1/4 cup olive oil, 1/4 cup fresh lemon juice, 2 cloves minced garlic, 1 tablespoon chopped thyme, 1 tablespoon chopped rosemary, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon paprika, and 1/4 teaspoon red pepper flakes to make the marinade.
- Place the chicken thighs in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Remove the chicken thighs from the marinade and place them on the prepared baking sheet, skin side up. Discard the remaining marinade.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
