  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree until smooth, then return to the pot.
  • Stir in 1/2 cup of chopped fresh basil leaves and 1/2 cup of heavy cream. Season with salt and pepper to taste.
  • Simmer for an additional 5 minutes to allow the flavors to meld together.
