Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 cups chicken or vegetable broth
- 1 can (15 oz) pumpkin puree
- 1 cup heavy cream
- Salt and pepper to taste
- Pumpkin seeds for garnish (optional)
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add 1 chopped onion and cook until softened, about 5 minutes.
- Stir in 3 cloves of minced garlic, 1 teaspoon of curry powder, 1/2 teaspoon of ground cumin, 1/4 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg. Cook for 1-2 minutes until fragrant.
- Pour in 4 cups of chicken or vegetable broth and bring to a simmer.
- Whisk in 1 can of pumpkin puree until smooth.
- Simmer for 15-20 minutes, stirring occasionally.
- Stir in 1 cup of heavy cream and heat through.
- Season with salt and pepper to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Serve the soup hot, garnished with pumpkin seeds if desired.
