  • Place the peeled and chopped potatoes in a large pot and cover with cold water. Add a generous pinch of salt to the water.
  • Bring the pot to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • While the potatoes are cooking, in a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant. Remove from heat and set aside.
  • Drain the cooked potatoes and return them to the pot. Mash the potatoes using a potato masher or a fork until smooth.
