Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 2 cups water
- 2 cups diced potatoes
- 1 cup frozen corn
- 1 cup frozen peas
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the diced chicken and cook until browned, about 5 minutes.
- Add the chopped onion, sliced carrots, sliced celery, and minced garlic to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the chicken broth and water. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the diced potatoes, frozen corn, and frozen peas to the pot. Simmer for another 10 minutes, or until the vegetables are tender.
- In a small bowl, whisk together the heavy cream and all-purpose flour until smooth. Stir the mixture into the soup to thicken the broth.
- Season the soup with dried thyme, salt, and pepper to taste. Simmer for an additional 5 minutes to allow the flavors to meld.
