  • 2 tablespoons of all-purpose flour

Instructions

  • In a large pot, melt 2 tablespoons of butter over medium heat.
  • Add the chopped onion and minced garlic to the pot and sauté until softened, about 5 minutes.
  • Sprinkle 2 tablespoons of all-purpose flour over the onion and garlic, and stir to coat.
  • Pour in 4 cups of vegetable broth and add the chopped cauliflower florets. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Stir in 1 cup of whole milk and 2 cups of shredded cheddar cheese until the cheese is melted and the soup is creamy.
  • Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with chopped chives before serving.
