  • 1/2 cup coconut milk
  • Salt and pepper to taste

Instructions

  • In a large pot, heat 1 tbsp of olive oil over medium heat.
  • Add the chopped onion and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes.
  • Add the chopped carrots to the pot and pour in the vegetable broth.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the carrots are tender.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Stir in the coconut milk and season with salt and pepper to taste.
  • Simmer the soup for an additional 5 minutes to allow the flavors to meld together.
  • Ladle the creamy carrot and ginger soup into bowls and garnish with fresh cilantro before serving.
