  • Add the asparagus pieces to the pot and sauté for another 5 minutes, stirring occasionally.
  • Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, or until the asparagus is tender.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and puree in batches, then return it to the pot.
  • Stir in the heavy cream and season with salt and pepper to taste. Heat the soup over low heat until warmed through, about 5 minutes.
  • Ladle the creamy asparagus soup into bowls and top each serving with a dollop of sour cream. Serve hot and enjoy!
