Instructions

  • In a large pot, melt 2 tablespoons of butter over medium heat.
  • Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
  • Add the asparagus pieces to the pot and sauté for another 5 minutes, stirring occasionally.
  • Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15-20 minutes, or until the asparagus is tender.
  • Using an immersion blender or regular blender, puree the soup until smooth.
  • Return the soup to the pot and stir in the heavy cream. Heat the soup over low heat until warmed through, but do not boil.
  • Season with salt and pepper to taste.
  • Serve the creamy asparagus soup hot, garnished with a drizzle of cream or a sprinkle of chopped fresh herbs if desired.
