Instructions

  • Preheat the oven to 325°F (165°C).
  • Rinse the turkey and pat dry with paper towels. Place the turkey on a rack in a roasting pan.
  • In a small bowl, mix together the softened butter, chopped rosemary, thyme, sage, lemon zest, and orange zest. Season with salt and pepper.
  • Carefully loosen the skin of the turkey and rub the citrus herb butter mixture under the skin and all over the turkey, including inside the cavity.
  • Tie the turkey legs together with kitchen twine and tuck the wing tips under the body of the turkey.
  • Roast the turkey in the preheated oven for about 2 1/2 to 3 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  • While the turkey is roasting, prepare the cranberry glaze. In a saucepan, combine the cranberries, orange juice, honey, and balsamic vinegar. Bring to a simmer over medium heat and cook for 10-15 minutes, or until the cranberries burst and the mixture thickens into a glaze. Set aside.
  • During the last 30 minutes of roasting, brush the cranberry glaze over the turkey every 10 minutes, allowing it to caramelize and form a beautiful glaze.
  • Once the turkey is done, remove it from the oven and let it rest for 20-30 minutes before carving. Serve with any remaining cranberry glaze on the side.
