Ingredients
- 1 pound fresh crab meat
- 1 cup chopped spinach
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package of wonton wrappers
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 can (28 ounces) crushed tomatoes
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large bowl, mix together 1 pound of crab meat, 1 cup of chopped spinach, 1/2 cup of ricotta cheese, 1/4 cup of grated Parmesan cheese, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Place a small spoonful of the crab and spinach mixture onto a wonton wrapper. Moisten the edges with water and place another wonton wrapper on top. Press the edges to seal. Repeat with the remaining mixture and wrappers.
- In a large pot of boiling salted water, cook the ravioli for 2-3 minutes, or until they float to the top. Remove with a slotted spoon and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 cloves of minced garlic and 1/2 teaspoon of red pepper flakes. Cook for 1 minute, or until the garlic is fragrant.
- Stir in 1 can of crushed tomatoes and 1/4 cup of chopped basil. Season with salt and pepper to taste. Simmer for 10 minutes.
- Add the cooked ravioli to the skillet and toss to coat with the arrabbiata sauce.
- Serve the crab and spinach ravioli with a sprinkle of grated Parmesan cheese on top. Enjoy!
