Instructions

  • In a large pot, add the cow foot, onion, garlic, and bell pepper. Cook over medium heat until the cow foot is browned and the vegetables are softened.
  • Add the carrots, potatoes, pumpkin, cabbage, scotch bonnet pepper, and thyme to the pot.
  • Pour in the water or beef broth, and season with salt and pepper.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for 2-3 hours, or until the cow foot is tender.
