Instructions

  • Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
  • In a medium bowl, sift together 1 cup of almond flour and 1 3/4 cups of powdered sugar. Set aside.
  • In a large mixing bowl, beat 3 egg whites until foamy. Gradually add in 1/4 cup of granulated sugar and continue to beat until stiff, glossy peaks form.
  • Gently fold the almond flour mixture into the egg whites until fully combined. Be careful not to overmix.
  • Add 1/2 teaspoon of cotton candy flavoring oil and a few drops of pink food coloring to the batter. Gently fold until the color is evenly distributed.
  • Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets, leaving space between each one.
  • Tap the baking sheets on the counter to release any air bubbles, then let the macarons sit at room temperature for 30 minutes to form a skin.
  • Bake the macarons for 12-15 minutes, rotating the pans halfway through baking. Let them cool completely on the baking sheets before carefully removing them.
  • Once the macarons are completely cooled, sandwich them together with a small amount of cotton candy in the center. Enjoy!
