Ingredients
- 2 cups of cooked corned beef, diced
- 2 cups of cooked potatoes, diced
- 1 cup of onion, diced
- 2 tablespoons of butter
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 4 eggs (optional, for serving)
Instructions
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add 1 cup of diced onion to the skillet and cook until translucent, about 5 minutes.
- Add 2 cups of diced cooked corned beef and 2 cups of diced cooked potatoes to the skillet. Season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of paprika.
- Cook the mixture, stirring occasionally, until the bottom is browned and crispy, about 10-15 minutes.
- If desired, in a separate non-stick skillet, fry 4 eggs to your liking.
- Divide the corned beef hash onto 4 plates and top each with a fried egg, if using.
- Serve hot and enjoy!
