  • 2 cups of cooked potatoes, diced
  • 1 cup of onion, diced
  • 2 tablespoons of butter
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of paprika
  • 4 eggs (optional, for serving)

Instructions

  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Add 1 cup of diced onion to the skillet and cook until translucent, about 5 minutes.
  • Add 2 cups of diced cooked corned beef and 2 cups of diced cooked potatoes to the skillet. Season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of paprika.
  • Cook the mixture, stirring occasionally, until the bottom is browned and crispy, about 10-15 minutes.
  • If desired, in a separate non-stick skillet, fry 4 eggs to your liking.
  • Divide the corned beef hash onto 4 plates and top each with a fried egg, if using.
  • Serve hot and enjoy!
