Ingredients
- 1 9-inch unbaked pie crust
- 2 cups of corn kernels
- 1/2 cup of shredded cheddar cheese
- 1/2 cup of shredded mozzarella cheese
- 1/2 cup of shredded pepper jack cheese
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of all-purpose flour
- 1/4 cup of unsalted butter
- 1 cup of milk
- 3 eggs
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine 2 cups of corn kernels, 1/2 cup of cheddar cheese, 1/2 cup of mozzarella cheese, 1/2 cup of pepper jack cheese, and 1/4 cup of Parmesan cheese.
- Sprinkle 1/4 cup of all-purpose flour over the cheese and corn mixture, and toss to coat evenly.
- In a small saucepan, melt 1/4 cup of butter over medium heat. Stir in the flour-coated cheese and corn mixture, and cook for 2-3 minutes until the cheese is melted and the mixture is well combined.
- In a separate bowl, whisk together 1 cup of milk, 3 eggs, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of paprika.
- Gradually pour the milk and egg mixture into the cheese and corn mixture, stirring constantly until well combined.
- Pour the mixture into the unbaked pie crust, spreading it out evenly.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the filling is set.
