Instructions

  • Preheat the oven to 350 degrees F. Grease and flour two 9-inch round cake pans.
  • In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined.
  • Fold in 1 cup of crushed chocolate sandwich cookies into the cake batter.
  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool completely in the pans.
  • Once the cakes are cooled, place one cake layer on a serving plate. Spread the softened vanilla ice cream evenly over the top of the cake layer.
  • Place the second cake layer on top of the ice cream and press down gently to secure the layers together.
  • In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Frost the top and sides of the cake with the whipped cream mixture.
  • Sprinkle the remaining 1/2 cup of crushed chocolate sandwich cookies over the top of the cake.
  • Freeze the cake for at least 4 hours before serving to allow the ice cream to set.
