Colorado Green Chili

Ingredients
- 2 pounds pork shoulder, diced into 1-inch pieces
- 1/4 cup all-purpose flour
- 1/4 cup vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 pound roasted green chilies, peeled, seeded, and chopped
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a large bowl, toss the diced pork shoulder with 1/4 cup of flour until evenly coated.
- In a large pot or Dutch oven, heat 1/4 cup of vegetable oil over medium-high heat. Add the coated pork shoulder and cook until browned on all sides, about 5 minutes.
- Add the chopped onion and minced garlic to the pot, and cook for an additional 3-4 minutes until the onion is softened.
- Pour in the chicken broth, roasted green chilies, diced tomatoes, ground cumin, dried oregano, and cayenne pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, stirring occasionally.
- Season the green chili with salt and pepper to taste.
- Serve hot and enjoy with warm tortillas or over rice.
