Coconut Milk Glazed Biko with Caramel Drizzle

Ingredients
- 2 cups glutinous rice
- 2 1/2 cups water
- 1 1/2 cups coconut milk
- 1 cup brown sugar
- 1/2 teaspoon salt
- 1/2 cup coconut cream
- 1/4 cup caramel sauce
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. In a large pot, combine the rinsed rice and 2 1/2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the water is absorbed.
- In a separate pot, combine the coconut milk, brown sugar, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and reduces to a sticky consistency, about 15-20 minutes.
- Once the rice is cooked, transfer it to a greased baking dish and press it down firmly. Pour the coconut milk mixture over the rice, spreading it evenly to coat the surface. Bake in a preheated oven at 350°F for 20-25 minutes, or until the top is golden brown.
- While the biko is baking, heat the coconut cream in a small saucepan over low heat until it thickens slightly. Remove from heat and set aside.
- Once the biko is done baking, remove it from the oven and let it cool for 10 minutes. Drizzle the coconut cream over the top of the biko, then drizzle the caramel sauce on top.
- Slice the biko into squares and serve warm or at room temperature. Enjoy!
