Instructions

  • In a small bowl, whisk together 1/2 cup coconut milk, the juice and zest of 2 limes, 3 cloves minced garlic, 2 tablespoons soy sauce, 2 tablespoons honey, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Place the 4 boneless, skinless chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
  • Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  • Garnish with chopped fresh cilantro and serve with rice or a side salad. Enjoy!
