- 1 cup coconut flour
- 2 teaspoons baking powder

- 4 eggs

Instructions
- In a large bowl, whisk together 1 cup of coconut flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- In a separate bowl, beat 4 eggs and then mix in 1 cup of coconut milk, 2 tablespoons of honey, 2 tablespoons of melted coconut oil, and 1 teaspoon of vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined. Let the batter sit for a few minutes to thicken.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes, or until golden brown.
- Repeat with the remaining batter, greasing the skillet as needed.
