Instructions

  • In a small bowl, mix 1 cup of coconut milk with 1 tablespoon of curry powder. Set aside.
  • In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  • Add 1/2 cup of diced onion and 1/2 cup of diced bell pepper to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
  • Add 2 cups of cooked white rice to the skillet. Stir-fry for 2-3 minutes to heat the rice through.
  • Pour the coconut milk and curry mixture over the rice. Stir to combine and coat the rice evenly with the curry mixture.
  • Add 1/2 cup of frozen peas to the skillet. Stir-fry for an additional 2-3 minutes until the peas are heated through.
  • Drizzle 2 tablespoons of soy sauce over the rice. Stir to combine.
