Instructions

  • Add 1/2 cup of diced onion and 1/2 cup of diced bell pepper to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
  • Add 2 cups of cooked white rice to the skillet. Stir-fry for 2-3 minutes to heat the rice through.
  • Pour the coconut milk and curry mixture over the rice. Stir to combine and coat the rice evenly with the curry mixture.
