Instructions

  • Rinse the dried white beans and soak them in water overnight.
  • In a large pot, combine the soaked beans, pork ribs, chorizo, bacon, onion, garlic, potatoes, bay leaf, sweet paprika, salt, and pepper.
  • Add 6 cups of water to the pot and bring to a boil over high heat.
  • Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beans and meat are tender.
  • Remove the bay leaf and discard.
  • Serve the Cocido Montañés hot, with crusty bread on the side. Enjoy!
