Cocido Montañés

Ingredients
- 1 lb of dried white beans
- 1 lb of pork ribs
- 1/2 lb of Spanish chorizo, sliced
- 1/2 lb of bacon, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 potatoes, peeled and diced
- 1 bay leaf
- 1 tsp of sweet paprika
- Salt and pepper to taste
- 6 cups of water
Instructions
- Rinse the dried white beans and soak them in water overnight.
- In a large pot, combine the soaked beans, pork ribs, chorizo, bacon, onion, garlic, potatoes, bay leaf, sweet paprika, salt, and pepper.
- Add 6 cups of water to the pot and bring to a boil over high heat.
- Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beans and meat are tender.
- Remove the bay leaf and discard.
- Serve the Cocido Montañés hot, with crusty bread on the side. Enjoy!
