Ingredients
- 4 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 cups mixed salad greens
- 4 hard-boiled eggs, sliced

- 1 cup cooked bacon, crumbled
- 1 avocado, diced
- 1/2 cup crumbled blue cheese
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 clove garlic, minced
Instructions
- Preheat grill to medium-high heat.
- Brush the salmon fillets with 1 tablespoon of olive oil and season with salt and pepper.
- Grill the salmon for 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes.
- In a large bowl, arrange the mixed salad greens as the base of the salad.
- Arrange the sliced hard-boiled eggs, cherry tomatoes, cooked bacon, diced avocado, and crumbled blue cheese on top of the salad greens.
