Classic Vanilla Cake with Chocolate Frosting

Ingredients
- 2 1/2 cups of all-purpose flour
- 1 1/2 cups of granulated sugar
- 3 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 cup of unsalted butter, softened
- 4 large eggs
- 1 cup of whole milk
- 2 teaspoons of vanilla extract
- For the chocolate frosting:
- 1 cup of unsalted butter, softened
- 3 1/2 cups of powdered sugar
- 1/2 cup of unsweetened cocoa powder
- 1/2 cup of heavy cream
- 1 teaspoon of vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine 2 1/2 cups of flour, 1 1/2 cups of sugar, 3 teaspoons of baking powder, and 1/2 teaspoon of salt.
- Add 1 cup of softened butter, 4 eggs, 1 cup of milk, and 2 teaspoons of vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
- Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the chocolate frosting, in a large bowl, beat 1 cup of softened butter until creamy. Gradually add 3 1/2 cups of powdered sugar and 1/2 cup of cocoa powder, beating until well combined.
- Pour in 1/2 cup of heavy cream and 1 teaspoon of vanilla extract. Beat on medium speed for 2-3 minutes until the frosting is smooth and creamy.
- Once the cakes are completely cooled, spread a layer of chocolate frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake with the remaining chocolate frosting.
