Classic Crockpot Pot Roast

Ingredients
- 3-4 pounds chuck roast
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and cut into chunks
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
Instructions
- Season the chuck roast with salt and pepper to taste.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Sear the chuck roast on all sides until browned, about 3-4 minutes per side.
- Place the chopped onion, minced garlic, carrots, and potatoes in the bottom of a crockpot.
- Place the seared chuck roast on top of the vegetables in the crockpot.
- Pour the beef broth and Worcestershire sauce over the roast and vegetables.
- Add the fresh thyme and rosemary sprigs to the crockpot.
- Cover and cook on low for 8 hours, or until the meat is tender and easily shreds with a fork.
- Once cooked, remove the chuck roast and vegetables from the crockpot and transfer to a serving platter.
- Strain the cooking liquid from the crockpot and pour over the pot roast and vegetables before serving.
