  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Instructions

  • Season the chuck roast with salt and pepper to taste.
  • In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Sear the chuck roast on all sides until browned, about 3-4 minutes per side.
  • Place the chopped onion, minced garlic, carrots, and potatoes in the bottom of a crockpot.
  • Place the seared chuck roast on top of the vegetables in the crockpot.
  • Pour the beef broth and Worcestershire sauce over the roast and vegetables.
  • Add the fresh thyme and rosemary sprigs to the crockpot.
  • Cover and cook on low for 8 hours, or until the meat is tender and easily shreds with a fork.
  • Once cooked, remove the chuck roast and vegetables from the crockpot and transfer to a serving platter.
  • Strain the cooking liquid from the crockpot and pour over the pot roast and vegetables before serving.
