Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 2 lbs of ground beef, 1 finely chopped onion, 2 minced cloves of garlic, 1 cup of breadcrumbs, 2 eggs, 1/4 cup of ketchup, 1/4 cup of milk, 1 finely chopped seeded jalapeno, 1 tsp of cayenne pepper, 1 tsp of salt, and 1/2 tsp of black pepper.
  • Mix the ingredients until well combined, but do not overmix.
  • Transfer the meat mixture to a loaf pan and shape into a loaf.
  • Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy the spicy kick!
