Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 2 lbs of ground beef, 1 cup breadcrumbs, 1/2 cup milk, 1/2 cup ketchup, 1/4 cup finely chopped onion, 2 cloves minced garlic, 2 beaten eggs, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp dried oregano, and 1/2 tsp dried thyme. Mix until well combined.
  • Shape the meat mixture into a loaf and place it in a baking dish.
  • Lay the bacon slices over the top of the meatloaf, tucking the ends underneath the loaf.
  • Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C) and the bacon is crispy.
  • Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
