Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the sliced mushrooms to the skillet and cook for 5-7 minutes, until they are golden brown and tender. Season with salt and pepper to taste. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced onion and green bell pepper until they are soft and caramelized, about 5-7 minutes. Season with salt and pepper to taste.
  • Preheat the oven to 350 degrees F. Open the hoagie rolls and place a slice of provolone cheese on each bottom half. Place the rolls on a baking sheet and bake for 3-5 minutes, until the cheese is melted and the rolls are lightly toasted.
  • To assemble the sandwiches, divide the sautéed mushrooms, onions, and peppers among the hoagie rolls. Serve immediately and enjoy!
