Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced onions and green peppers until they are soft and slightly caramelized, about 5 minutes.
  • Return the cooked chicken to the skillet and stir to combine with the onions and peppers.
  • Place 2 slices of provolone cheese on top of the chicken mixture in the skillet. Allow the cheese to melt and then stir to combine with the chicken, onions, and peppers.
  • Slice the hoagie rolls in half and place them on a baking sheet. Divide the chicken mixture evenly among the hoagie rolls and top each with 1-2 slices of provolone cheese.
  • Broil the sandwiches in the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and serve hot. Enjoy!
