Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup orange juice
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon grated ginger
- Salt and pepper to taste
- 1 cup quinoa
- 1 3/4 cups chicken or vegetable broth
- 1 orange, peeled and segmented
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced almonds
- 2 tablespoons olive oil
- 2 tablespoons orange juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 1/4 cup orange juice, 2 tablespoons honey, 2 tablespoons soy sauce, 1 tablespoon olive oil, minced garlic, grated ginger, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
- Rinse the quinoa under cold water. In a medium saucepan, bring the broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, orange segments, chopped cilantro, and sliced almonds.
- In a small bowl, whisk together 2 tablespoons olive oil, 2 tablespoons orange juice, 1 tablespoon honey, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine.
- Preheat the grill or broiler. Remove the salmon from the marinade and discard the excess marinade. Grill or broil the salmon for 4-5 minutes on each side, or until the fish flakes easily with a fork and is cooked through.
