Instructions

  • Rinse the quinoa under cold water. In a medium saucepan, bring the broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and let it cool.
  • In a large bowl, combine the cooked quinoa, orange segments, chopped cilantro, and sliced almonds.
  • In a small bowl, whisk together 2 tablespoons olive oil, 2 tablespoons orange juice, 1 tablespoon honey, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine.
  • Preheat the grill or broiler. Remove the salmon from the marinade and discard the excess marinade. Grill or broil the salmon for 4-5 minutes on each side, or until the fish flakes easily with a fork and is cooked through.
