Cilantro Lime Steak Burrito Bowl
Created by: Howcan Team
Ingredients
- 1 lb flank steak
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- Lime wedges for serving
- Sour cream and salsa for topping
Instructions
- In a small bowl, mix together 1/4 cup lime juice, 1/4 cup chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper.
- Place the flank steak in a shallow dish and pour the marinade over the steak, turning to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat grill or grill pan to medium-high heat. Remove the steak from the marinade and discard the excess marinade. Grill the steak for 4-5 minutes per side, or until desired doneness. Let the steak rest for 5 minutes before slicing thinly against the grain.
- In a bowl, assemble the burrito bowl by dividing the cooked rice, black beans, corn, diced tomatoes, red onion, and cilantro among 4 serving bowls.
- Top each bowl with slices of grilled steak, avocado, and a lime wedge.
- Serve with sour cream and salsa on the side, if desired. Enjoy!
