Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder

- 1/2 cup colorful sprinkles
- 12 lollipop sticks
- 1 cup white chocolate chips
- 2 tablespoons vegetable shortening
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together 1 cup of flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
- In a separate large bowl, cream together 1/2 cup of softened butter and 1/2 cup of granulated sugar until light and fluffy.
- Beat in 1 egg and 1 teaspoon of vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Gently fold in 1/2 cup of colorful sprinkles.
- Using a small cookie scoop or tablespoon, portion the dough and roll into 12 balls. Place the balls on the prepared baking sheet and insert a lollipop stick into each ball, flattening slightly to secure.
- Bake for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let the cookie pops cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- In a microwave-safe bowl, melt 1 cup of white chocolate chips and 2 tablespoons of vegetable shortening in 30-second intervals, stirring until smooth.
- Dip each cookie pop into the melted white chocolate, allowing any excess to drip off, then immediately sprinkle with additional colorful sprinkles. Place the dipped pops back onto the parchment-lined baking sheet to set.
