  • 1 teaspoon vanilla extract
  • 1/2 cup brewed espresso, cooled
  • 2 tablespoons coffee liqueur
  • 24 ladyfinger cookies
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup fresh raspberries
  • 1/4 cup granulated sugar
  • 1/4 cup water

Instructions

  • In a large mixing bowl, beat 1 cup of heavy cream until stiff peaks form.
  • In another bowl, whisk together 8 ounces of mascarpone cheese, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth.
  • Gently fold the whipped cream into the mascarpone mixture until well combined. Set aside.
  • In a shallow dish, combine 1/2 cup of brewed espresso and 2 tablespoons of coffee liqueur. Dip each ladyfinger cookie into the espresso mixture, ensuring they are soaked but not soggy.
  • Arrange a layer of soaked ladyfingers in the bottom of a 9x9 inch serving dish.
  • Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  • Sift 1/4 cup of unsweetened cocoa powder over the top of the tiramisu.
  • In a small saucepan, combine 1/2 cup of fresh raspberries, 1/4 cup of granulated sugar, and 1/4 cup of water. Cook over medium heat, stirring occasionally, until the raspberries break down and the sauce thickens, about 5 minutes. Remove from heat and strain the sauce to remove the seeds.
  • Drizzle the raspberry sauce over the top of the tiramisu.
  • Refrigerate the tiramisu for at least 2 hours before serving to allow the flavors to meld. Enjoy!
