Created by: Howcan Team
Ingredients
- 1 and 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 and 3/4 cups granulated sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2-3 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, sift together 1 and 3/4 cups flour, 3/4 cup cocoa powder, 1 and 3/4 cups sugar, 2 teaspoons baking soda, 1 teaspoon baking powder, and 1 teaspoon salt.
- Add 2 eggs, 1 cup buttermilk, 1/2 cup vegetable oil, and 2 teaspoons vanilla extract to the dry ingredients. Mix until well combined.
- Pour in 1 cup boiling water and mix until the batter is smooth. The batter will be thin, but that's okay.
- Fill each cupcake liner about 2/3 full with batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before frosting.
- In a large bowl, beat 1 cup peanut butter and 1/2 cup softened butter until smooth and creamy.
- Gradually add 2 cups powdered sugar, mixing well after each addition.
- Add 2-3 tablespoons of heavy cream, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Beat until the frosting is light and fluffy.
- Transfer the peanut butter frosting to a piping bag and frost the cooled cupcakes. Enjoy!
