Ingredients
- 2 cups of whole almonds
- 1 cup of semi-sweet chocolate chips
- 1 tablespoon of coconut oil
- 1/4 teaspoon of vanilla extract
- 1/8 teaspoon of salt
Instructions
- Line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips and 1 tablespoon of coconut oil.
- Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Stir in 1/4 teaspoon of vanilla extract and 1/8 teaspoon of salt.
- Add 2 cups of whole almonds to the chocolate mixture and stir until the almonds are evenly coated.
- Using a fork or a slotted spoon, remove the almonds from the chocolate, allowing any excess chocolate to drip off, and place them on the prepared baking sheet in a single layer.
- Place the baking sheet in the refrigerator for 10 minutes, or until the chocolate has set.
- Once the chocolate has hardened, transfer the chocolate covered almonds to an airtight container and store at room temperature for up to 2 weeks.
