  • In a large bowl, combine 3 cups of sweetened shredded coconut, 1/3 cup of granulated sugar, 1/4 cup of all-purpose flour, and 1/4 teaspoon of salt.
  • In a separate bowl, beat 2 large egg whites until stiff peaks form. Gently fold the beaten egg whites and 1 teaspoon of vanilla extract into the coconut mixture until well combined.
  • Using a cookie scoop or your hands, form the mixture into 12 mounds and place them on the prepared baking sheet.
  • Bake for 18-20 minutes, or until the macaroons are golden brown around the edges. Allow them to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • In a microwave-safe bowl, melt 1/2 cup of semi-sweet chocolate chips in 30-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the cooled macaroons.
