  • In a separate bowl, whisk together 1 cup of milk, 1/3 cup of vegetable oil, 1 egg, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in 1 cup of chocolate chips.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
