Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 2 pounds of ground turkey, 1 cup of breadcrumbs, 1/2 cup of chopped onion, 2 cloves of minced garlic, 1/4 cup of chopped fresh cilantro, 2 minced chipotle peppers in adobo sauce, 1 tablespoon of adobo sauce, 1 teaspoon of ground cumin, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 2 beaten eggs.
  • Mix the ingredients until well combined.
  • Transfer the mixture to a greased 9x5 inch loaf pan and press it down evenly.
  • Spread 1/2 cup of ketchup over the top of the meatloaf.
