Instructions

  • In a slow cooker, combine 1 chopped onion, 4 cloves of minced garlic, 2 chopped chipotle peppers, 1 cup of chicken broth, 1/4 cup of apple cider vinegar, 2 tablespoons of brown sugar, 1 tablespoon of cumin, 1 tablespoon of oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  • Add 4 pounds of pork shoulder to the slow cooker, making sure it is coated with the sauce.
  • Cover and cook on low for 6-8 hours, or until the pork is very tender and easy to shred with a fork.
  • Once the pork is cooked, remove it from the slow cooker and shred it using two forks.
  • Return the shredded pork to the slow cooker and stir it into the sauce. Let it cook for an additional 15-30 minutes to absorb the flavors.
