Ingredients
- 4 lbs pork shoulder
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, chopped
- 1 cup chicken broth
- 1/4 cup apple cider vinegar
- 2 tbsp brown sugar
- 1 tbsp cumin
- 1 tbsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a slow cooker, combine 1 chopped onion, 4 cloves of minced garlic, 2 chopped chipotle peppers, 1 cup of chicken broth, 1/4 cup of apple cider vinegar, 2 tablespoons of brown sugar, 1 tablespoon of cumin, 1 tablespoon of oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Add 4 pounds of pork shoulder to the slow cooker, making sure it is coated with the sauce.
- Cover and cook on low for 6-8 hours, or until the pork is very tender and easy to shred with a fork.
- Once the pork is cooked, remove it from the slow cooker and shred it using two forks.
- Return the shredded pork to the slow cooker and stir it into the sauce. Let it cook for an additional 15-30 minutes to absorb the flavors.
- Serve the chipotle pulled pork on tacos, sandwiches, or as a main dish. Enjoy!
