Ingredients
- 2 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/4 cup chipotle peppers in adobo sauce, minced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine 2 lbs of ground beef, 1 cup breadcrumbs, 1/2 cup milk, 1/4 cup minced chipotle peppers in adobo sauce, 1 small finely chopped onion, 2 cloves minced garlic, 2 eggs, 1 tsp salt, and 1/2 tsp black pepper. Mix until well combined.
- Transfer the meat mixture to a 9x5 inch loaf pan, and shape into a loaf.
- In a small bowl, mix 1/2 cup ketchup, 2 tbsp brown sugar, and 1 tbsp Worcestershire sauce. Spread the mixture over the meatloaf.
- Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the topping is caramelized.
- Allow the meatloaf to rest for 10 minutes before slicing and serving.
