Spicy Chinese Egg Rolls with Dipping Sauce

Ingredients
- 1/2 pound ground pork
- 1/2 cup shredded cabbage
- 1/4 cup shredded carrots
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 12 egg roll wrappers
- 2 cups vegetable oil for frying
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sriracha sauce
Instructions
- In a large skillet, cook 1/2 pound of ground pork over medium heat until no longer pink. Drain excess fat.
- Add 1/2 cup shredded cabbage, 1/4 cup shredded carrots, and 2 cloves of minced garlic to the skillet. Cook for 2-3 minutes until vegetables are tender.
- Stir in 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and 1/2 teaspoon of ground ginger. Cook for an additional 2 minutes. Remove from heat and let the mixture cool.
- Place 2-3 tablespoons of the pork and vegetable mixture onto each egg roll wrapper. Fold the sides of the wrapper over the filling, then roll tightly. Use a small amount of water to seal the edge of the wrapper.
- In a large skillet, heat 2 cups of vegetable oil over medium-high heat. Fry the egg rolls in batches for 2-3 minutes on each side, or until golden brown. Drain on paper towels.
- In a small bowl, mix together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of honey, and 1 teaspoon of sriracha sauce to make the dipping sauce.
- Serve the spicy Chinese egg rolls with the dipping sauce and enjoy!
