Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 3 cups broccoli florets
- 1/2 cup unsalted cashew nuts
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp cornstarch
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes (optional)
- Cooked white rice, for serving
Instructions
- In a small bowl, whisk together 1/4 cup soy sauce, 2 tbsp oyster sauce, 1 tbsp cornstarch, and 1/2 cup chicken broth. Set aside.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add 1 lb of chicken pieces and stir-fry for 5-6 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, heat the remaining 1 tbsp of vegetable oil. Add 3 cloves of minced garlic and stir-fry for 30 seconds, or until fragrant.
- Add 3 cups of broccoli florets to the skillet and stir-fry for 3-4 minutes, or until tender-crisp.
- Return the cooked chicken to the skillet. Pour the soy sauce mixture over the chicken and broccoli. Stir-fry for 2-3 minutes, or until the sauce has thickened and everything is heated through.
- Stir in 1/2 cup of unsalted cashew nuts and 1 tsp of sesame oil. Add 1/4 tsp of red pepper flakes if desired, for a bit of heat.
