Instructions

  • In a large pot, cook 1 pound of ground beef over medium heat until browned. Drain excess fat.
  • Add the chopped onion, red bell pepper, and minced garlic to the pot. Cook for 5 minutes, until vegetables are softened.
  • Stir in the diced tomatoes, kidney beans, and tomato sauce. Season with chili powder, cumin, paprika, salt, and pepper. Simmer for 15 minutes.
  • In a separate pot, cook 2 cups of elbow macaroni according to package instructions. Drain and set aside.
  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
  • Combine the cooked macaroni and chili mixture in the prepared baking dish. Stir in 1 1/2 cups of shredded cheddar cheese.
  • Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  • Bake for 20 minutes, or until the cheese is melted and bubbly.
