Chili Mac and Cheese

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) tomato sauce
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, cook 1 pound of ground beef over medium heat until browned. Drain excess fat.
- Add the chopped onion, red bell pepper, and minced garlic to the pot. Cook for 5 minutes, until vegetables are softened.
- Stir in the diced tomatoes, kidney beans, and tomato sauce. Season with chili powder, cumin, paprika, salt, and pepper. Simmer for 15 minutes.
- In a separate pot, cook 2 cups of elbow macaroni according to package instructions. Drain and set aside.
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- Combine the cooked macaroni and chili mixture in the prepared baking dish. Stir in 1 1/2 cups of shredded cheddar cheese.
- Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Allow to cool for a few minutes before serving. Enjoy!
