Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is soft.
  • Stir in the kidney beans, diced tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, oregano, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally, until the chili thickens.
  • Preheat the oven to 350 degrees F. Place the flour tortillas on a flat surface. Spoon the cooked rice onto the center of each tortilla, followed by a generous amount of the chili con carne mixture. Sprinkle each with 1/2 cup of shredded cheddar cheese.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos. Place the burritos seam-side down on a baking sheet.
  • Sprinkle the remaining cheddar cheese over the tops of the burritos. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve the burritos with a dollop of sour cream and a sprinkle of chopped cilantro. Enjoy!
