Extra Cheesy Chili Con Carne Burrito

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup cooked rice
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is soft.
- Stir in the kidney beans, diced tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, oregano, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally, until the chili thickens.
- Preheat the oven to 350 degrees F. Place the flour tortillas on a flat surface. Spoon the cooked rice onto the center of each tortilla, followed by a generous amount of the chili con carne mixture. Sprinkle each with 1/2 cup of shredded cheddar cheese.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos. Place the burritos seam-side down on a baking sheet.
- Sprinkle the remaining cheddar cheese over the tops of the burritos. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Serve the burritos with a dollop of sour cream and a sprinkle of chopped cilantro. Enjoy!
