Chickpea Burger

Ingredients
- 2 cans (15 oz) of chickpeas, drained and rinsed
- 1/2 cup of breadcrumbs
- 1/4 cup of finely chopped red onion
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped fresh parsley
- 4 burger buns
- Toppings of your choice (lettuce, tomato, onion, avocado, etc.)
Instructions
- In a food processor, combine the chickpeas, breadcrumbs, red onion, garlic, cumin, paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.
- Transfer the mixture to a bowl and stir in the chopped parsley.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Heat a non-stick skillet over medium heat and lightly coat with oil. Cook the chickpea patties for 4-5 minutes on each side, or until golden brown and heated through.
- Toast the burger buns in the skillet for 1-2 minutes, until lightly browned.
- Assemble the burgers by placing a chickpea patty on each bun and adding your choice of toppings.
- Serve the chickpea burgers immediately and enjoy!
