  • 2 cans (15 oz) of chickpeas, drained and rinsed
  • 1/2 cup of breadcrumbs
  • 1/4 cup of finely chopped red onion
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped fresh parsley
  • 4 burger buns
  • Toppings of your choice (lettuce, tomato, onion, avocado, etc.)

Instructions

  • In a food processor, combine the chickpeas, breadcrumbs, red onion, garlic, cumin, paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.
  • Transfer the mixture to a bowl and stir in the chopped parsley.
  • Divide the mixture into 4 equal portions and shape each portion into a patty.
  • Heat a non-stick skillet over medium heat and lightly coat with oil. Cook the chickpea patties for 4-5 minutes on each side, or until golden brown and heated through.
  • Toast the burger buns in the skillet for 1-2 minutes, until lightly browned.
  • Assemble the burgers by placing a chickpea patty on each bun and adding your choice of toppings.
  • Serve the chickpea burgers immediately and enjoy!
