  • 1 cup of broccoli florets
  • 1 carrot, sliced
  • 3 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 2 green onions, chopped
  • 1/4 cup of vegetable broth
  • 1 tablespoon of hoisin sauce
  • 1 teaspoon of sriracha sauce
  • Cooked rice or noodles for serving

Instructions

  • In a bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Add the cubed tofu and toss to coat. Let it marinate for 10 minutes.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Add the minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
  • Pour in 1/4 cup of vegetable broth, 1 tablespoon of hoisin sauce, and 1 teaspoon of sriracha sauce. Stir to combine.
  • Return the cooked tofu to the skillet and toss everything together to coat the tofu and vegetables with the sauce.
  • Garnish with chopped green onions and serve the tofu stir fry over cooked rice or noodles. Enjoy!
