Ingredients
- 2 cups cooked chicken, diced
- 1/2 cup mayonnaise
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup grapes, halved
- 1/4 cup almonds, chopped
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- In a large bowl, combine 2 cups of cooked chicken, 1/2 cup mayonnaise, 1/4 cup celery, 1/4 cup red onion, 1/4 cup grapes, and 1/4 cup chopped almonds.
- In a small bowl, whisk together 1 tablespoon of lemon juice, 1 teaspoon of Dijon mustard, and salt and pepper to taste.
- Pour the dressing over the chicken mixture and toss to coat evenly.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- To serve, place lettuce leaves on a plate and spoon the chicken salad on top.
