Created by: Howcan Team
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 can (14 oz) diced tomatoes
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- In a shallow dish, mix 1/4 cup of flour with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Dredge the chicken breasts in the seasoned flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add 4 cloves of minced garlic and sauté for 1 minute.
- Pour in 1/2 cup of chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in 1 can of diced tomatoes and bring the mixture to a simmer.
- Return the chicken to the skillet and spoon the tomato mixture over the chicken. Simmer for 5 minutes to allow the flavors to meld.
- Sprinkle 1/4 cup of chopped fresh basil and 1/4 cup of grated Parmesan cheese over the chicken.
- Serve the chicken pomodoro hot, with additional Parmesan cheese and basil for garnish if desired.
Chicken pomodoro is a classic Italian dish that originated in the Campania region. It features tender chicken breast cooked in a rich, flavorful tomato sauce with garlic, onions, and herbs. The dish is often served over al dente pasta, such as spaghetti or penne, and garnished with fresh basil and grated Parmesan cheese. One of the most famous versions of chicken pomodoro can be found at the renowned Italian restaurant, Carbone, in New York City. Their chefs expertly prepare the dish, ensuring the chicken is perfectly cooked and the tomato sauce is bursting with vibrant flavors. The key to a delicious chicken pomodoro lies in using ripe, juicy tomatoes and high-quality olive oil. Some chefs also add a splash of white wine or a pinch of red pepper flakes to elevate the dish's complexity. For a unique twist on the traditional recipe, consider using sun-dried tomatoes or adding a touch of balsamic vinegar for a sweet and tangy flavor profile. Whether enjoyed at a fine dining establishment or homemade in your kitchen, chicken pomodoro is a timeless Italian favorite that never fails to satisfy.
