Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 can (14 oz) diced tomatoes
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- In a shallow dish, mix 1/4 cup of flour with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Dredge the chicken breasts in the seasoned flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add 4 cloves of minced garlic and sauté for 1 minute.
- Pour in 1/2 cup of chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in 1 can of diced tomatoes and bring the mixture to a simmer.
- Return the chicken to the skillet and spoon the tomato mixture over the chicken. Simmer for 5 minutes to allow the flavors to meld.
- Sprinkle 1/4 cup of chopped fresh basil and 1/4 cup of grated Parmesan cheese over the chicken.
- Serve the chicken pomodoro hot, with additional Parmesan cheese and basil for garnish if desired.
