Chicken Fried Steak with Sweet Potato Mash

Ingredients
- 4 cube steaks
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 eggs
- 1/4 cup milk
- 1 cup vegetable oil for frying
- 4 medium sweet potatoes, peeled and cubed
- 4 tablespoons butter
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- In a shallow dish, mix together 1 cup of flour, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of paprika, 1/2 teaspoon of cayenne pepper, and salt and pepper to taste.
- In another shallow dish, whisk together 2 eggs and 1/4 cup of milk.
- Dredge each cube steak in the seasoned flour, then dip into the egg mixture, and dredge again in the seasoned flour, pressing the coating onto the steaks. Set aside.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the steaks for 3-4 minutes on each side, or until golden brown and cooked through. Remove to a paper towel-lined plate to drain.
- Meanwhile, place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the sweet potatoes are fork-tender. Drain well.
- Mash the sweet potatoes with butter and 1/4 cup of milk until smooth and creamy. Season with salt and pepper to taste.
- Serve the chicken fried steak with the sweet potato mash and enjoy!
