Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
Instructions
- Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Dredge the seasoned chicken breasts in 1/4 cup of all-purpose flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add 2 cloves of minced garlic and sauté for 1 minute.
- Pour in 1 cup of chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in 1 cup of heavy cream and bring to a simmer.
- Add 1 cup of grated Parmesan cheese and stir until melted and smooth.
- Add 2 cups of chopped fresh spinach and cook for 2-3 minutes, or until wilted.
- Return the cooked chicken breasts to the skillet and spoon the sauce over the top.
- Simmer for an additional 2-3 minutes to heat the chicken through and thicken the sauce.
