Instructions

  • Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  • Dredge the seasoned chicken breasts in 1/4 cup of all-purpose flour, shaking off any excess.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add 2 cloves of minced garlic and sauté for 1 minute.
  • Pour in 1 cup of chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  • Stir in 1 cup of heavy cream and bring to a simmer.
  • Add 1 cup of grated Parmesan cheese and stir until melted and smooth.
  • Add 2 cups of chopped fresh spinach and cook for 2-3 minutes, or until wilted.
  • Return the cooked chicken breasts to the skillet and spoon the sauce over the top.
  • Simmer for an additional 2-3 minutes to heat the chicken through and thicken the sauce.
